Banoffee Overnight Oats

I think my obsession with banoffee-flavoured breakfast food is getting slightly out of hand; I've already made banoffee oatmeal, baked banoffee oatmeal, banoffee pancakes and a banoffee pie oatmeal parfait, and now I've paired the wonderful combination of bananas and dates with my new love - overnight oats. This recipe may even be better than the stovetop version, simply because the dates are left to soak for hours overnight which means that they become extremely soft and gooey. In addition to this, their incredible flavour has more of a chance to mingle with the rest of the ingredients which causes the oats to taste even sweeter and more toffee-like than when they're all just cooked together for a short amount of time. If you want a raw breakfast (or just something cooling on a hot day) then you can eat this cold in the morning. At first I was skeptical about consuming what I thought was essentially just cold oatmeal but overnight oats are far better than that! The texture isn't at all odd like I thought it would be and they're still super filling, just like regular oatmeal. If you want a hot breakfast then feel free to warm the oats up in a saucepan in the morning - you'll end up with a deliciously thick, creamy and flavoursome bowl of heaven! 

Banoffee overnight oats with strawberry chia jam and dried mulberries

Serves 1
  • 3 Medjool dates
  • 2/3 cup oats
  • 2/3 cup water or milk of choice (to make it fully raw use homemade nut milk)
  • 1 ripe banana


Firstly, pit and chop the dates into small pieces then combine them in a bowl with the oats and milk/water; mash the banana, add it to the rest of the ingredients and mix well until everything is incorporated. You can either leave this mixture in the bowl and cover it with clingfilm or transfer it into an empty jar with a lid (I used an old jam jar). Leave it in the fridge to soak overnight then top it with whatever you like in the morning and enjoy!
