Spiced Apple & Pear Oatmeal


It's almost April which means that spring is upon us and the weather in the UK should be getting warmer - should being the operative word! In fairness, the past couple of weeks have had a few sunny days which have been a welcome change to the chilly weather we experienced throughout autumn and winter, but unfortunately the last few days have been full of wind and rain. It doesn't feel very spring-like at all so warming breakfasts have been a necessity; one of my favourite comforting breakfasts is oatmeal, especially my apple pie version, but yesterday I fancied adding some extra fruit to the mix and so a wonderful creation was born - spiced apple and pear oatmeal. It's definitely a new favourite of mine!



Ingredients
Serves 1
  • 1/2 cup (50g) oats
  • 1 cup (250ml) non-dairy milk 
  • 1 apple
  • 1 pear
  • 2 tsp mixed spice (if you don't have this just use 1 tsp cinnamon and 1/4 tsp each of nutmeg and ginger)


Method

Chop half the apple and the whole pear into bite-sized pieces and put them into a small saucepan along with the oats and non-dairy milk. Turn the heat up to the highest setting and bring the milk to a boil; once it's boiling reduce the heat to the lowest setting and let it simmer for about two minutes, stirring occasionally, until it has thickened up a bit.

Stir the mixed spice into the oatmeal and let it cook for another three or four minutes, stirring occasionally, until it's at your desired consistency. When it's ready pour it into a bowl, add your toppings (such as the other half of the apple) and enjoy!
