Pumpkin Pie Oatmeal

It's mid-October which means that Halloween is just a couple of weeks away, so I'm sure most of you have seen your fair share of pumpkins already! Although I've grown up seeing pumpkins being sold this time of year (and have even carved faces into one or two) I've never actually eaten anything with them in before. I decided that would change this year and after searching for a can of pumpkin puree for what seemed like forever I finally managed to do so! I wanted to make something simple first so I decided that oatmeal would be the perfect starting point for my pumpkin experimentation. The puree lends a smooth and creamy texture to the oats and, when coupled together with spices, it creates a delicious and warming breakfast which is perfect for those chilly autumn mornings.

Serves 1
  • 1/2 cup oats
  • 1 cup milk of choice
  • 1/2 cup pumpkin puree 
  • 2 tsp mixed spice or 1 tsp cinnamon, 1/4 tsp ginger and 1/4 tsp nutmeg


Put the oats and milk into a small saucepan, turn the heat up to the highest setting on your stove and bring the milk to a boil; once it's boiling reduce the heat to the lowest setting and let it simmer for about two minutes, stirring occasionally, until it has thickened up a bit.

Mix the pumpkin puree into the oatmeal along with the spices then let it cook for another two or three minutes, stirring occasionally, until it's at your desired consistency. When it's ready transfer it into a bowl, add your toppings and enjoy!

    1. Me too, it's so autumnal! CoYo is absolutely amazing, I really recommend you try it; it's quite thick (almost the consistency of Greek yoghurt) and it's super creamy! It tastes like coconut and has a slight tang (again, like Greek yoghurt) but it's still sweet enough to enjoy on its own :) xxx

  2. I love the sounds of this. Where do you get your pumpkin puree? I haven't been able to find any in my local supermarkets (sad face!) My favourite health foodstore didn't have it either...

    1. Aww, thank you so much! If you're in the UK you can get it from Real Foods, Waitrose or Freego but if you're anywhere else in the world then I'd suggest just looking on Amazon :) the brand is Libby's! xxx
